Hummus Quesadillas

Ingredients

  • 4 large tortillas (8 inch)
  • ½ cup of hummus
  • 1 ripe avocado sliced into thin wedges
  • 2 cups of cooked and mashed pinto beans, seasoned to taste
  • ½ cup mild salsa
  • a few thin slices of tomato or onion (optional)
  • salt to taste
  • cilantro for garnish

Steps

  • Step 1

Heat tortillas in dry frying pan until flexible.

  • Step 2

Quickly spread tortilla with humuus.

  • Step 3

Spread ½ cup of mashed beans on half of the tortilla.

  • Step 4

Place 3-4 slices of avocado on top of the beans and spoon a little salsa over that.

  • Step 5

Sprinkle with salt if desired.

  • Step 6

Fold tortilla in half and place in hot dry frying pan.

  • Step 7

Allow bottom side to toast, then flip and toast 2nd side.

  • Step 8

Flip one more time if needed to make it crispy.

  • Step 9

Cut into wedges with scissors as desired.

  • Step 10

Serve with side of non-dairy sour cream if desired. Garnish with chopped cilantro.
